Avila first started Guerrilla Tacos in 2012 setting out to do something good. He had gone to culinary schools in California and France, had cooked alongside some of the most recognized chefs in the world--Walter Manzke, Gary Menes, Alain Ducasse--and was ready to start his own thing. He decided to make tacos using locally sourced ingredients and experiment with unique recipes, thus Guerrilla Tacos was born. His newest book is "Guerrilla Tacos: Recipes from the Streets of L.A."
